An introduction into some of the fundamentals of game cooking and preparation at The B&G with David, Co-owner & Chef.

Game & Venison butchery is at the heart of the food we serve at the pub. We now source all of our venison from right here on The Phillimore Estate, the deer is expertly managed by the Game Keeper and team. English Farm Butchery then process and we now sell this sustainable superfood in The Barn Shop at the Bottle & Glass as well as on our menus.

David will take you through whole animal butchery - process, technique and recipes. From there, the focus will be on open fire cooking.

You’ll get to use equipment such as our Ox Grill and our bespoke Country Fire Kitchen planchas, asado crosses, chicken cages, turbot clamps and open grill tops.

Your day will start in our Tent Tipi, where you’ll go over the day with David over coffee and pastries. Following this will be a butchery demonstration and a chance to get hands on, and then get cooking.

The day will culminate in a sit down feast where you can enjoy the fruits of your labour.

The ticket includes the entire days experience, food & drink all day, and the feast plus wine & beer.

Extra tickets for the feast are available, so you can invite your other halves or friends, at £60 per head.
